Smoothies are a great way to increase your fruit and vegetable intake for the day. That’s probably the number one benefit of smoothies and if you’re transitioning into a plant-based lifestyle, this is a great way to begin your journey. What I love most about smoothies is that they are easy to prep. In about 5 minutes, you can have a delicious, filling and nutritious snack!

This smoothie contains many valuable nutrients from each and every ingredient. It is particularly packed with antioxidants from the blueberries and baby spinach, providing an array of health benefits that help protect our body. This smoothie also provides omega-3 fatty acids both from the chia seeds and walnuts. These two ingredients are some of the best sources for vegans to obtain omega-3 fatty acids, as it can be a challenge to obtain in our diet without proper meal planning. For a little sweetness, there’s an added date – which it too provides fiber and some vitamins.

My husband and I love making smoothies after a hike or walk. This weekend, we took about a 3 mile morning walk around our favorite trail – it’s one of the many things we enjoy quality time with each other – and then came home to making this smoothie. It was so refreshing and helped us curve our appetite while we planned what to prep for lunch.


Coconut Blueberry Smoothie

Serves: 2 servings
Total Time: 5 minutes or less

Ingredients

  • 1 cup baby spinach

  • 1 ½ cup frozen blueberries

  • ½ cup blackberries

  • ½ cup unsweetened coconut yogurt

  • ¼ cup walnuts

  • 1 pitted date

  • 1 tablespoon chia seeds

  • 1 to 1 ½ cup of filtered water (or unsweetened coconut milk)

Directions

1. Combine all ingredients in a high-speed blender and blend until smooth.

2. Serve and pour into two glasses. Enjoy!
