12 Vegan Potato Dishes: Recipe Roundup

Summer is coming close to an end and as the Fall slowly rolls in, it brings some fabulous seasonal vegetables. As one of the most recognized vegetable, potatoes give us a reason to celebrate this seasonal change as September is considered National Potato Month. I reached out to my wonderful dietitian colleagues to participate in a recipe roundup of vegan potato dishes and I am so happy to share them with you because they ALL sound so delicious!

Before we dive into these amazing recipes, I want to chime a little about their nutritional profile as potatoes continue to have a bad rep in the food kingdom. Potatoes are actually packed with a variety of nutrients and the skin provides dietary fiber. Potatoes are an excellent source of Vitamin C (which acts as an antioxidant), a good source of potassium (an electrolyte that helps maintain normal blood pressure), good source of Vitamin B6 (which helps make proteins in our body). So, I wouldn't credit this amazing root vegetable as an unnecessary carbohydrate because it provides so many good things for us. Sweet potatoes provide similar nutrients with the addition of Vitamin A (which plays a role in maintaining healthy vision).
